First of the series – Tupper Diary, featuring: Beef Tapa, Pork Menudo and Bacon Omelette
We are pleased to release a new series: Tupper Diary. It is a journal of tasty lunch boxes, stories and hopefully give some ideas for your next lunch break meal.
Baon1 or boxed lunch meals are practically left-over food that you take with you because you prefer it than food they sell at work or you just want to save up from the overpriced meal if you go out every lunch time. For us, it the both of those reasons above!
Beef Tapa
These are homemade spiced thinly-sliced beef strips, seasoned in salt, black pepper and loads of garlic then laid out to slightly cure under the sun. Here in Madrid, the low humidity hastens the process. Served with fresh tomatoes, spiced vinegar and fried rice made in the same oil left after frying the Beef Tapa.
Bacon Omelette
No leftovers for baon? Omelettes are so simple and fast to make. These rustic omelettes are made with 3 eggs and some bacon strips left from a batch. Heat the pan, render the chopped bacon. Meanwhile, beat the eggs. Set heat to medium high. Pour the eggs and in 3 minutes it’s ready to lay down on the bed of rice!
Pork Menudo
Strictly speaking this is not a leftover to end up as baon. As soon as it was cooked, before lunch time, 2 days ago as I recall it, I intentionally set aside some for a guaranteed tasty lunch in the office!
